SPALAREA UTILAJELOR DIN INDUSTRIA DE PRELUCRARE A CARNII

Rezumat: Intretinerea si spalarea utilajelor din industria de prelucrare a carnii reprezinta un obiectiv important in pastrarea starii de igiena a produselor alimentare. Se propun metode de surmontare a dificultatilor care apar la utilizarea diferitelor tipuri constructive de celule de afumare a mezelurilor si a pestelui. Sunt propuse si discutate procedee pentru spalarea celulelor de afumare, a carucioarelor, a navetelor si a traseelor de injectie a saramurii in carne, prin utilizarea produselor de spalare cu marca inregistrata sub denumirea EURODET, care prezinta diferite grade de spumare. Maintenance and cleaning of the devices used in the meat processing industry are important objectives in maintaining the hygiene of the food products. Methods for overcoming difficulties that occur in different smoking cells of meat products and fish are proposed. There are also presented and discussed methods for washing smoking cells and accesories, lines of brine injection in the meat, by using EURODET–type washing products. The cleaning efficiency of detergents with normal foaming, reduced foaming or increased foaming is discussed.
